Preparing chocolate for the microscope

Scientist preparing chocolate for scanning electron microscope

Liz Girvan (Microscopy Otago) prepares a chocolate sample for visualising on the scanning electron microscope (SEM). Because chocolate contains water, the sample is frozen in liquid nitrogen before it is visualised.
