Checking scale-up

What types of tests are done to check that large-scale food production in a manufacturing facility is the same as small-scale food production on the lab bench?

Transcript

Rebecca Abbot ( Plant & Food Research )

To ensure that the product made in the pilot plant is the same as what we have produced in the laboratory, we run a series of tests on it. We complete a composite analysis.

So that means that we look at the starch, the protein, the moisture content. We look at the insoluble and soluble fibre levels of both of the products. And we just compare that they are the same, within a particular range, so a small percentage (difference between products).
